Meal Planning Monday
With 8isgreat posting her family's meal plan today, this week you'll have two families meal plans to check out!
From 8is great:
Monday - Mexican Stuffed Shells, served with shredded lettuce, diced tomatoes and sour cream and Southwestern corn.
Tuesday - Ham and Potato Casserole, Peas, Rolls
Wednesday - Chicken Wraps, Pasta Salad, pineapples
Chicken Wraps-
1 8oz. can Mandarin Oranges
1/4 Cup As ian Plum Sauce
1 tablespoon Rice Wine Vinegar or Wine Vinegar
1/2 lb. cooked chicken cut into strips
1 red bell pepper chopped
1/2 cup chopped seeded cucumber
2 scallions thinly sliced
2 1/2 cups packed chopped romaine lettuce
4 whole wheat tortillas
Drain Oranges reserving 2 tablespoons of the juice
In a large bowl combine all wet ingredients. Add chicken, pepper, cucumber, scallions, lettuce and oranges. Toss to coat. Roll into tortillas.
NOTE* If I make this ahead of time I do so without the lettuce. When my girls bring this to school for lunch they put the chicken mix into a little rubbermaid container and bring a baggie with shredded lettuce and then make their wrap right before eating.
Thursday - Ham and Pepperoni Stromboli, Ceasar salad
Friday - Cheese stuffed Manacotti, Peas, Garlic bread
Saturday - 3 Bean Chili, Corn Bread
Sunday - Pork Chops, Rice, Applesauce, Sauerkraut

Sunday: Hubby ordered take out Chinese food for Mother's Day!
Monday: Tball game--so grilled chicken salads before the game (I love using the McCormick seasonings "Zesty Herb".
Tuesday: Carribean Jerk chicken, with black bean/corn salsa, mashed potatoes and homemade rolls. (make extra mashed potatoes for Thursday)
Wednesday: Ham and broccoli quiche, fruit salad.
Thursday: piano-- Sheppard's pie (using extra potatoes made Tuesday night), remaining homemade rolls made Tuesday.
Friday: another Tball game--red beans and rice and cornbread before the game.
Saturday: Chicken cordon bleu, buttered eggs noodles, peas.
