Sunday - BBQ chicken legs, rice, corn, rolls
Monday - 3 Bean Chili, cornbread, salad
Tuesday - Hot Dogs, Beans, French Fries, fruit
Wednesday - shepherd's pie, rolls, salad
Thursday - Hot Open Faced Turkey Sandwiches, and a salad of greens with almonds and dried cranberries (heat 1 can of turkey gravy & 1/2 can of cream of mushroom soup pour over left over Turkey on sliced bread, add fresh ground pepper)
Firday - Black Bean Enchiladas, SW rice, SW corn (in olive oil saute chopped onions, chopped green pepper and minced onions. Add 1 can of drained and rinsed black beans, a splash of vinegar, oregano and cumin. Add enough water to almost cover. Simmer 30 min. Lightly cover bottom of 9x13 pan with enchilada sauce. Place a spoonful of beans in the center of flour tortilla add an index finger sized slice of cream cheese. Fold up Burrito style. Cover with remaining enchilada sacue and shredded cheese. Bake at 350 for 35 min. or until bubbly. Serve with sour cream and diced tomatoes.)
Saturday - Monterey Chicken, rice, corn (grill chicken breasts w/ BBQ sauce, add bacon and shredded cheddar - melt, top with diced tomatoes and sliced green onions)
